Serves 8 ❄
- 500g lean lamb mince
- 1 egg, lightly beaten
- 100g rolled oats
- 60ml sweet chilli sauce
Shape these as rissoles for family dinners, burgers for BBQ’s, or mealballs for snacks or lunches.
Place all ingredients in a large bowl and season with sea salt and pepper. Mix well. With damp hands, roll into 8 rissoles, place on a tray, cover and refrigerate for 30 minutes. Heat a nonstick frying pan over moderate / high heat and cook turning occasionally for 15 minutes or until cooked through.

These are a great way to smuggle extra veggies into your family’s diet. Add 1 cup of grated vĂ©getables into the mince before shaping. I also love them with a tablespoon of freshly chopped rosemary (thanks to my Dad, I have a lovely supply of fresh herbs hand delivered every week … they cost me a cuddle!)
