Serves 4
- 1 kg pork spare ribs
- large onions, sliced
- 1 clove garlic, crushed
- 375ml smokey BBQ sauce

Put the ribs, 2 teaspoons of salt, and ¼ teaspoon of pepper in a large saucepan. Cover with water and bring to a boil. Reduce heat to low and simmer for 30 minutes. Drain. Add the onion, garlic and sauce and stir to completely coat. Preheat oven 180°C. Line two baking trays with baking paper. Remove the ribs to the baking trays, spoon over excess sauce, cover with foil and cook for 30 minutes. Remove foil and cook for an additional 30 minutes.

Serve with Potato Bake from page 108 and the Oriental Coleslaw, page 106, is a must too!
