Baked Fish

Serves 2
  • 2 fresh white fish fillets
  • 10g butter, melted.
  • 1 lemon

A healthier alternative to takeaway Fish ‘n Chips!

Preheat oven to 180°C. Coat fish with butter and season with sea salt and cracked pepper. Cut lemon into slices and place on fish. Wrap the fish in foil. Bake for 10 to 15 minutes or until tender (depending on thickness) and easily pulls away with a fork.

Sprinkle a little garlic or fresh herbs on the fish before wrapping. This is perfect served with Homemade Chips: Simply take 2 × 100g potatoes, slice into thin, 2 to 3mm, rounds. Heat 1½ cups of peanut oil in a large frying pan and when hot, add half the potatoes, cook until golden on the rim and cooked through, 2 to 3 minutes. Remove with a slotted spoon, place on paper towel and repeat with remaining potato.
