Serves 4
- 200g broccoli, roughly chopped
- 250g spaghetti
- 50g feta
- 60ml garlic-infused olive oil
- 25g grated parmesan
Simple and delicious – my two favourite “ingredients” when preparing dinner!
Bring three litres of salted water to the boil. Add broccoli and pasta, then cook according to packet instructions. Strain the pasta and broccoli in a colander. Return pasta and broccoli to the pot; add oil and half the parmesan. Stir to combine. The broccoli should be well broken down, and little bits stuck to each strand of pasta. Serve immediately, sprinkled with remaining parmesan, and season with salt and pepper.
